I did a little more digging and there is the Taurus Programme that is trying to reintroduce them. They're still in operation and releasing animals that are very similar into the wild in Europe.

However a few years ago I remember reading about a project aimed at reintroducing the aurochs species. I can't find anything recent about it so it's possible that it ended in failure
The Heck Cattle breed is one such attempt, but so far isn’t quite the same. It’s hard to “breed back” things.
If you want to introduce weird science into your campaign, the Heck cattle breeding program is a good place to start. Two brothers competing to recreate an ancient cattle species for the Nazis.

ZEBU: Indian domesticated cattle, taken from the extinct Indian Aurochs. There are 75 breeds, most known for their large humps and dewlaps- most are comprised of variations of the Yak, Gaur, Aurochs, etc.

-The enormous, muscular Gaurs are similar to the Aurochs, being a humped breed- 21,000 still exist in India and surrounding countries, and they are the largest cattle species. Herds are led by the oldest adult females; males are solitary. They are large enough to fend off almost any predator- only Tigers and Saltwater Crocodiles are known to take adult Gaur.

-Gaurs have similar stats to Aurochs, being neither more aquatic or any larger & tougher than those wild cattle.

-Bison are a very large form of cow, famous as a symbol of North America (where they are the largest fauna period, having outlasted all the other megafauna like Woolly Rhinos and Mammoths and stuff), though small herds exist in Europe (where it's sometimes called the "Wisent"). They were a sacred prey species of the first people of North America, and both of course suffered greatly upon European expansion. Problem was, the VAST herds of bison all over the continent were very vulnerable to a little thing called a "Gun", and White & Native alike pretty much exterminated the lot of them (in some cases, deliberately, to cause the starvation of people- some Europeans were less nice than others). Today, they exist in some VERY rare, but sustainable herds, but most are now domesticated animals, producing a similar-tasting meat to regular cows. A far cry from the old days, however.

-Fun Fact: Environmentalists blame cattle farming for a lot of greenhouse gas emissions, as they produce a hell of a lot of methane from their eating habits and sheer size... the problem? There were MORE Bison during Pre-European North America than there are cattle today- and they were eating GRASS, not hay- producing more methane than cattle farming would today. In this sense, the mass extermination of Bison was a BENEFIT to the environment. Not that the methan produced by cattle is anywhere CLOSE to the majority produced by mankind, though.

-Bison are basically standard Cows with higher strength but weaker horns, but an increased fighting skill coming from being a wild animal far more prone to fighting. At PL 7, one of these will kick the HELL out of any Wolf or Human that comes calling with their sheer power, and as such, are usually free from most animals' hunting unless they're extremely old, sick or young. They're strong, and CAN kill a Lion in single combat if they get lucky. Most predators would just as soon not bother.

-Cape Buffalo are one of Africa's "Big Five", the enormously-popular, tourist-drawing large mammals of the continent. They are most distinctive for the large "boss" on their skull- their horns meet in the middle in a continuous defensive package. And, like most large herbivores, they are incredibly-dangerous, killing over 200 people A YEAR. Despite their sheer size and power, they aren't even CLOSE to being Africa's toughest mammal- in battles with Rhinos, they are consistently the losers- I've even watched a YouTube clip of a fight where the Rhino TORE OUT THE BUFFALO'S EYE, and produced numerous other injuries that ended up being fatal. Nearly-equal in height, they don't have the width nor the weight to handle one of the super-heavyweights.

-The only real predators for healthy adults are Nile Crocodiles and Lions (Lions typically involve males in the hunt for that exact purpose- they're the only ones who can muscle down an adult solo), though even THAT is usually rare. As herd animals, they are quite dangerous for any animal to threaten, and it's pretty common for the startled herd to raise their courage and come running back to save a fallen ally- the famous "Battle of Kruger" recording shows this happening while Lions & Crocs fight over a fallen calf! Of the Big Five, they're easily the most-common, with 900,000 animals roaming Africa, often in massive herds numbering in the hundreds. This makes them one of the only large African animals legal for humans to hunt.

-Stats-wise, they're basically the same animal as the Aurochs, being around the same size, mass and level of wildness. They're just interesting enough to deserve a separate section.

-There are a few kinds of tiny Buffalo- about 400-700 lbs.

FOREST BUFFALO: A small subspecies of Cape Buffalo (weighing about 550-700 lbs.) with a much smaller set of horns. They are the only ones who regularly live in rainforest regions in Africa. Unlike Cape Buffalo, one or two males live year-round with the herd.

-The Yak is iconic to East Asia, where they are the primary Cattle breed in the mountains of China & Tibet. They are one of the largest bovine species, and are bulky, stocky animals meant for colder climates. The rare golden-furred subspecies is incredibly rare, with 172 animals known in the wild.
