I think a lot of it you just have to eyeball and go with what feels right. I gave up trying to have much of anything in the way of a pure conversion system with my fantasy builds. Some things translate well between d20/Pathfinder/D&D and MnM and some things just don't.

And from a PL standpoint, most of the creatures are built to be upgraded or downgraded depending on the level of your party. You can throw out a baby dragon if you want your 1st or 2nd level PCs to get a chance to fight one, or have your 15th level characters face an elder dragon for a challenge. I don't see why you couldn't have your PCs run into a baby owlbear at level 1 or the King of the Owlbears at level 15, too.

Nice- I always found the Archons interesting, though I'll admit I always glossed over their section and ignored all their powers, since the games tended to pile them on so thick that I couldn't be bothered to read them all :). The Devils & Demons seemed much more simple.

You'd think they wouldn't be much of a threat to normal adventurers, but misunderstandings happen all the time, especially when you get into the grey areas of the Prime Material. I can easily see them getting enraged over something that's perfectly legal in whatever part of the Prime they're in, then having the adventurers have to deal with them.
